Easy & Delicious Mini Keto Cheesecake

Because Valentine's Day is right around the corner, and I love me an excuse to eat dessert, I wanted to try one that fits in with the diet my husband and I have been on for a few months: the Keto diet. Yes, it's super trendy, and yes, everyone and their sister is trying it... but the truth is, we like eating this way, and we both feel so much better after giving it a shot for a few weeks prior to the holidays. Speaking of holidays... any holiday pretty much comes with a dessert of some kind, so to keep us away from any tempting sugary treats, I tried a keto cheesecake, and it's officially a hit!I won't make you wait until the end of the post for the recipe, and truthfully, I didn't take photos of the process because I was about 95% sure this wasn't going to work out on the first try, but lo and behold...I made up this recipe from a few I had seen online, and I was going to add in sour cream, which seems to be in a lot of keto cheesecakes, but I forgot to! Just keeping it real with you guys, here. A food blogger I am not! Here's the recipe:[yumprint-recipe id='7']The whole thing has already been devoured, so I'll be sure to make some more in a couple of weeks, and maybe I'll keep this book out until then because reading love letters definitely gets anyone in a Valentine's mood, and the guys in this book are some hopeless romantics!I think the fresh flowers from a local shop, The Local Bloom, definitely spruce things up, as well. But don't worry... the flowers on the cheesecake aren't real!As an option, you could use some sugar-free strawberry jam as a topping, and it's still Keto-friendly.I hope this recipe inspires you to make a little sugar-free dessert! This is also a great option for diabetics and also happens to be gluten-free, so it appeals to lots of people!Let me know if you try it, ok?And now to get you even further into the Valentine's Day mood, there are 29 more Love Day projects and recipes for you to check out from some really talented Canadian friends of mine! Valentine's Day Cherry Pie by Jo-Anna of A Pretty LifeValentine's Triple Berry Breakfast Parfait by Joanna at Lazy Moms BlogValentine's Day Mini Bouquet with Printable Wrap by Lucy of Craftberry BushDIY Iron-On Mini Tote Bags for Galentine's Day by Joann of Woman in Real LifeDIY Clay Valentine Heart Wall Hanging by Jen of Kitchen Counter ChroniclesValentine's Day Smoothie Bowl by Kristeena of Motherhood in StilettosChunky Crochet Heart Banner by Christina of The DIY Mommy'I'm Stuck On You Valentine' Free Printable by Chandra of HashtagBlessed BlogDIY Love Tees by Colleen of Lemon ThistleRed Velvet Cheesecake by Kim of Kim Power StyleCustom Floral Dishware DIY with Temporary Tattoos by Christine of Amidst the ChaosValentine's Day Keto Cheesecake by Thalita of The Learner ObserverHow to Host a Mother/Daughter Galentine's by Kelsey of Kelsey Diane BlogFree Printable Farmhouse Style Valentine's Day Cards by Shannon of AKA DesignGALentine’s Day Tea Party by Shauna of Satori Design for LivingValentine Heart Necklace by Christine of The DIY DreamerSimple Valentine's Day Decor by Alicia of A Burst of BeautifulValentine's Sushi Recipe by Stefania of From the PlaypenValentine’s Day Decor by Dannyelle of Life is a PartyValentine Countdown for Kids by Heather of Raising MemoriesLove Sign by Meagan of Row House NestValentine's Day Kindness Countdown Calendar by Jen of Rambling RenovatorsRustic Valentine's Day Decor by Sarah of The Project PilePeach Raspberry Crisp by Brittany of My Daily RandomnessHow to Make Pine Cone Roses by Jane & Sonja of Sustain My Craft HabitHandmade Paper Gift Boxes by Jessica of The Vanderveen HouseDIY Valentine's Day Pouch by Lidia of Design Inside the BoxValentine Oreo Cookies by Kendra of Joy In Our HomeValentine's Day Lunch Idea by Adriana of Chaos and CaffeineChocolate Cherries Baileys Cookies by Emily of daydreaming of elsewhere
