Easy & Delicious Mini Keto Cheesecake
Because Valentine's Day is right around the corner, and I love me an excuse to eat dessert, I wanted to try one that fits in with the diet my husband and I have been on for a few months: the Keto diet. Yes, it's super trendy, and yes, everyone and their sister is trying it... but the truth is, we like eating this way, and we both feel so much better after giving it a shot for a few weeks prior to the holidays. Speaking of holidays... any holiday pretty much comes with a dessert of some kind, so to keep us away from any tempting sugary treats, I tried a keto cheesecake, and it's officially a hit!I won't make you wait until the end of the post for the recipe, and truthfully, I didn't take photos of the process because I was about 95% sure this wasn't going to work out on the first try, but lo and behold...I made up this recipe from a few I had seen online, and I was going to add in sour cream, which seems to be in a lot of keto cheesecakes, but I forgot to! Just keeping it real with you guys, here. But don't worry... the flowers on the cheesecake aren't real!As an option, you could use some sugar-free strawberry jam as a topping, and it's still Keto-friendly.I hope this recipe inspires you to make a little sugar-free dessert!
