Oatmeal Peanut Butter Bars - part 7I know what you must be thinking.  "ANOTHER recipe?"  Yep!  I'm making it a personal goal to learn how to make (and bake) more things.  I grew up surrounded by women who were wizards in the kitchen.  My brother himself is somewhat of a cooking prodigy - he can make anything.  I?  I am pathetic when it comes to cooking!  I'm willing to try, but always feel like I fail, so I've started learning some things and I'm starting to find out that I can follow a recipe SOOOOOOO well!  Isn't that true talent? No, I know it's not.  But it's how I can manage to come out of the kitchen alive, so it's what I'm doing. The recipe I'm about to share with you doesn't qualify as cooking OR baking.  It's just a super fast and delicious (and HEALTHY) treat my husband and I have grown to love around here.  Oh and it turns out other people like it too!  I tested it on our church's small group a few weeks ago and it was a hit.  YAY!

Oatmeal Peanut Butter Bars - with chocolate!

Of course I'm going to show you the entire thing in pictures.  DUH!!This recipe came from Joy Hardin over at The Joy of Everyday Cooking.  All I did was add chocolate chips, the rest is all her!Oatmeal Peanut Butter Bars - ingredients & finalOatmeal Peanut Butter Bars - part 1Oatmeal Peanut Butter Bars - part 9

In case you need the recipe card for this, here it is.  You can print it, save it and review it.[yumprint-recipe id='3']Does it get much easier than this?I think not!Oatmeal Peanut Butter Bars - part 6By the way, these are delicious for breakfast (and yes, it's fantastic with a glass of milk), but we also have them as a little treat every now and then.  Thanks to Joy for coming up with this incredibly easy and delicious recipe.  As I went to comment on her blog about these, I noticed the last comment and I HAVE to share it with you:

Rosebud says:  I used 1 cup honey, 1 cup peanut butter, 2 cups quick oats, 1/2 cup coconut, 1/2 cup mini chocolate chips. When it was pressed into the pan I dotted the tops with butterscotch chips and refrigerated. This is delicious. The variations are endless. Thank you for coming up with this.

GENIUS!

I can't wait to experiment with this one.

Have any suggestions?  Do share!
