Paleo Cauliflower Cottage Pie
Good morning all you good lookin' people!I thought I'd start us off with a little Tasty Tuesday Treat. How's that for alliteration? So ever since I started The Whole30 (you can read more about my first week here) I have gotten LOTS of questions from family, friends and readers. Lots of things like "How are you doing this?" and "What do you actually eat?"Well, here's something we've had twice now in the last 12 days...
I have no photos of this whole thing in process, so let me just share this with you: I called this a Cottage Pie because my friend April, who is awesome at cooking and life in general, dropped some knowledge on me with this post. You can't call a pie with meat on the bottom and potato on top a Shepherd's Pie unless the meat is lamb!!! Duh! Sounds soooo obvious now, doesn't it? Shepherd... sheep... lamb... yep! So when you use beef, it's called a Cottage Pie. Which I kind of like in this case because... Alliteration with cauliflower. It just works! Ok here is the recipe!

It's as tasty as it looks. Wait... unless you don't think it looks tasty, then that won't work!
Though I didn't add this to the notes above, this can absolutely be made with lamb, or pork, or perhaps even chicken or turkey meat. Why not, right? You can definitely change this recipe up a little but to satisfy your taste buds. Oh, if you don't know what clarified butter is, find out more here. Unless you're on the Whole30 challenge or eating strictly Paleo, you don't need to worry about this - just use regular butter!
It even LOOKS like potato, right? Oh and I just have to tell you that the cauliflower does taste great! Honest... the first time we had this I forgot it wasn't potato.
And there you have it. If you're trying to eat a little cleaner, this is a great way to do so while having a bit of comfort food.
